Lace Cookies

The third cookie recipe does not make your traditional cookie. These lace cookies are thin and crisp, but full of sweetness. You can mold them when they come out of the oven, but I usually just keep them as flat crisps.

1 cup flour
1 cup coconut
1/2 cup light corn syrup
1/2 cup brown sugar
1/2 cup margarine
1 tsp vanilla

Preheat oven to 350 F.

Mix flour and coconut. Combine corn syrup, brown sugar, and margarine in heavy saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Remove from heat and blend in flour mixture and vanilla. Drop tsp of batter onto a foil-covered cookie sheet. Bake 8-10 minutes and then peel the cooled cookies off the foil.
